Stem and stalk vegetables are the extended part of the root of the plant that grown above the ground. Stem and stalk vegetables could in fact also be classed as leafy vegetables. This group mainly consists of fleshy leafstalks, such as rhubarb and celery. What is striking about this group is that some varieties are cultivated in the dark. This method produces a white or light colored product.
